Pineapple Shrimp And Cashew Nut Fried Rice - Adun

I know it’s been over two months. I apologize for the long break, school has been really killing. But I am back to cooking and making new things. Can I get an amen?

My friend asked me if I had ever made pineapple fried rice. I remembered seeing it in a Thai restaurant and made a mental note to try it later. Well after 13 excuses and procrastinating 20 times, I finally made it.

I deserve a standing ovation. No? I’ll just order pizza and reward myself. Okay let’s go on.

Making this dish had me so hyped, I started throwing stuff in the pan and flipping and doing all sorts of ‘chefy’ stuff. Got carried away. I realized I needed and missed using a wok.


  • 4 Cups Jasmine Rice (A Day Old)
  • Shrimps
  • Green Onions
  • Soy Sauce (Major Key)
  • One Medium Sized Sweet Pineapple
  • Crushed Red Pepper
  • Garlic
  • One Red Onion
  • Salt
  • Green Peas
  • Diced Carrots
  • Sweet corn
  • Green beans
  • Cooking Oil
  • And a little bit of love

  1. It’s important to note: don’t add water.
  2. Make sure you use rice that was cooked the day before.
  3. Be generous with the Soy Sauce.Pineapple Halved - Adun


  1. Cut up your pineapple in half and scoop out the insides. Cut into small bite sized chunks. Cut up vegetables. Pineapple Chunks
  2. In a pan heat up 2 Tbsps of oil, throw in shrimp with some red onions, garlic and some salt and cook for two minutes.
  3. Heat up some oil and add your rice, and some chopped green onions and red pepper flakes. Toss around till the grains aren’t sticking together.
  4. Add 3 Tbspns of Soy Sauce and mix properly on low heat till it’s mixed evenly with the rice (here, you need to put enough Soy Sauce to change the rice to a brown fried rice color you desire).
  5. Add already cooked shrimp, red onions, more green onions, peas, carrots, green beans and stir thoroughly till its mixed properly. You want to mix this till the soy sauce and veggies are mixed evenly.
  6. Add some cashew nuts. I used about three handfuls and ate about one handful.
  7. Lastly, add your cut up pineapple chunks. If there is some juice at the bottom of the chunks in the bowl, drink it.
  8. Mix everything properly while on low heat and leave to simmer for two minutes.
  9. Serve Up and Enjoy!
