Roasted Sweet Potatoes with Turkey Stew
Growing up in Nigeria, root crops like yams, potatoes, or cocoyam being roasted over an open fire was something everyone had enjoyed at one point or the other.
Roasting root crops is a really beautiful method of cooking these crops and they give you this crispy outer and a soft pillowy inside that makes for a perfect bite.
A roasted potato recipe? Doesn’t everyone know how to roast potatoes? I thought so too till I saw a good number of chaotic roasted potato photos on the internet.
The other day, I went by the Asian store and found these sweet potatoes (Boniato) that we grew up eating in Nigeria and I knew I HAD to get them and enjoy them roasted with some turkey Stew. These sweet potatoes have white “flesh” on the inside and pair beautifully with any sauce or by itself.
Ingredients
- Oil
- Salt to taste
- 4 Sweet Potatoes
- Adùn Turkey Stew
Directions
- Peel your potatoes, cut them into long strips and cut them diagonally.
- Drizzle some cooking oil and a few pinches of salt, giving this a good mix.
- In an airfryer at 350F, roast your potatoes for 19-20 minutes.
- Serve with your favorite “dip” or side - palm oil, pepper sauce or pair it with some Turkey Stew from Adùn.
